Renee’s Crustless Quiche

Crustless Quiche // We love these kinds of recipes because they are so versatile. Basically just add ingredients you have around: use leftover ham, or cubed cooked potato, spinach, tomatoes…you name it.

Ingredients for 8 Servings

  • 4 oz
    bacon
  • 1/2
    yellow onion, diced
  • 6
    eggs
  • 3/4 c
    heavy cream
  • 2 (10 oz)
    boxes spinach, thawed and drained or broccoli, or combination of both
  • 2 c
    gruyere cheese, shredded (or Asiago or any other cheese)
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper

    1 hour, 15 minutes

Method

  1. Heat oven to 350 and butter your deep pie pan or your muffin tins

  2. Cook bacon until crisp, drain and chop

  3. Use one tbsp of drippings to sauté onions for 5 minutes until soft but not brown

  4. Combine eggs, cream,  cheese,  salt, and pepper

  5. Stir in bacon, onion and Spinach or Broccoli, or both

  6. Pour mixture into prepared pan

  7. Bake for 1 hour 15 minutes (takes about 1 hour in muffin tins)
