Baked Potato Stuffed with Vegetables

Ingredients for 3 Servings

  • 3
    large potatoes
  • 1/2 tsp
    salt and pepper
  • 1
    small onion
  • 3
    cloves garlic
  • 1
    can of black beans
  • 1
    can of sweet corn

Method

  1. To bake potatoes:

    • Preheat the oven to 400°.
    • Scrub potatoes, then pat them dry.
    • Poke some holes around the potato with a fork.
    • Bake potatoes for about 50-60 minutes; or until tender.
  2. Dice onions

    • On medium heat sauté the diced onions until it looks translucent
  3. Mince garlic.

    • Add garlic once onion is translucent
  4. Reduce heat to medium-low.

  5. Add black beans and corn

  6. When the potatoes are baked, cut them lengthwise, not all the way through.

  7. Fluff with a fork

  8. Spoon the saute mixture over the top.

  9. Add any desired toppings before serving.
