Ingredients for 4 Servings

  • 2 c
    canned chicken
  • 1 c
    canned corn
  • 1 c
    canned black beans
  • 1/4 c
    small diced onion
  • 1/2 c
    mayonnaise
  • 2
    limes, juiced
  • to taste
    cilantro
  • 1
    bag of salad greens

Method

  1. Combine chicken, corn, black beans, and diced onions in a medium bowl.

  2. In a separate bowl, whisk together mayo, lime juice, and cilantro.  Add to chicken mixture.

  3. Serve over salad greens of your choice.

Notes

Tips: Add additional seasonings such as chili powder, cumin, granulated garlic to the dressing for even more flavor.
